We have reached a value of 60 HRC although this is not our only goal because hardness without important flexibility is harmful.
It is not easy to have knives that with such high hardness values remain sharp for a long time and at the same time easy to sharpen.
The critical factor is the flexibility that prevents the edge from microfracting. ruining the sharpness itself.
The flexibility also allows the blade to "feel" the steel for easy sharpening.
This combination of factors requires a special treatment developed over 140 years and which the Due Buoi calls it "EXTRA DURO".
The exclusive and luxurious Tuscan olive wood handle is untreated and not coated with any paint. Even if there are paints on the market that can come into contact with food, our choice is to keep the natural wood. By using your knife, day after day, the wood will change color and become more and more unique. The only treatment we can recommend is to grease it with a few drops of olive oil.
